爆量青蔥！一鍋到底輕鬆燉出【蔥燒子排】ft. Domo，廚房廢寶索艾克

 

你 可以一次幾根 記得第一次吃到蔥燒子排 身體像是被開啟一樣 啃到整根排骨拿起來啃 感謝 Domo 爸爸贊助神盾礦石湯鍋 義大利domo鍋 米其林主廚御用 礦石鍋 湯鍋0 00 開始03 00 炒辛香料04 34 煎子排06 57 開燉囉09 54 裝盤 食材 5人份 豬子排 小排 五花排 2kg麵粉 適量薑 10片蒜頭 10瓣 拍碎辣椒 1根 拍過蔥 500g 分成蔥白與蔥綠後切段滷汁紹興酒 100ml蕃茄醬 3大匙 可用番茄泥或番茄糊取代蠔油 3大匙醬油 250ml糖 3大匙水 500ml 作法1 下油熱鍋 用中大火炒香蒜頭 薑片和辣椒與 上色後取出2 同隻鍋子 加入蔥白後炒上色取出3 子排迅速過水 擦乾後拍上一層麵粉 下鍋用中大火把表面煎上色4 把子排取出 接下來依序將蔥薑辣椒 蔥白放回鍋子裡5 放上子排 加入紹興酒 番茄醬 蠔油 醬油 糖 燒滾6 放上蔥綠 加點水後煮滾 轉小火蓋上鍋蓋燉一個小時7 最後開蓋 再燉30分鐘8 試吃一下醬汁鹹度 需要就調整 燉到子排用筷子輕輕一戳就骨肉分離9 上桌後再灑點蔥綠就ok囉
