バブカ作りました NY発のお菓子みたいなパン 甘くてチョコレートとナッツ感たっぷりの大好きな味のパン焼けました レシピ パウンド型 2個 1 薄力粉 40g ココアパウダー 10g 砂糖 25gを混ぜ合わせる 2 無塩バター25gを1センチ角程度に切り加える 3 指でつぶすように混ぜる 4 好みの大きさのそぼろ状になったら冷蔵庫で冷やしておく パン作ります 手でも捏ねられます 5 くるみ 30gを150度に予熱したオーブンで10分焼き 荒く刻んでおく 6 卵 1個と電子レンジで40度に温めた牛乳 130gを合わせておく 暑い日は牛乳の温度を下げてください 7 強力粉 250g 塩 3g 砂糖 35g ドライイースト 3g バニラオイル 数滴と5を170gを目安に加えひとまとまりになるまで捏ねる 6の残りは冷蔵庫に取っておく 8 柔らかくした無塩バター 40gも入れ なめらかに捏ね上げる 9 オイル薄く塗ったボウルに入れ 2倍の大きさになるまで一次発酵させる 35度で40分 10 ガス抜きし 2個 1個 約230g に分割し丸め固く絞った布巾をかけ 15分ベンチタイムをとる 11 20 30センチ弱に伸ばす 12 ヌテラ 90g 1枚 45g を塗り チョコチップ 30gと5を散らす 13 端からくるくると巻き とじ目をしっかりと閉じる 14 端をつなげたまま残し 2分割する 15 ねじねじして 端は閉じる 16 18センチのパウンド型に入れる 我が家には18センチの型が2個なかったので 21センチの型にオーブンシートを敷いて使いました 17 1 5倍の大きさになるまで二次発酵させる 35度で50分 18 6の残りを刷毛で塗る 19 4をのせる 20 180度に予熱したオーブンで10分 170度に下げて10 15分焼く 焦げやすいので途中 ホイルを被せてください 21 焼き上がったら型から外し ラックで冷ます 22 いただきます 甘いパンなのでとても焦げやすいです 焼成時は目を離さないでください 目を離すと妄想グルメのようになります クランブルをのせたパンは比較的焦げにくく 甘さがプラスされるのでさらに美味しいです We made babka bread It s a sweet bread that was popularized in New York It turned out great with a sweet flavor full of chocolate and nuts RECIPE Yields two pound cake shaped babka Make the cocoa crumbles1 Mix together 40g cake flour 10g cocoa powder and 25g sugar 2 Add 25g of unsalted butter cut into 1cm cubes 3 Mush and blend using fingers 4 Once the crumbles are your desired size chill in fridge Make the bread Can be done by hand 5 Bake 30g walnuts in oven for 10 minutes at 150 C and mince roughly 6 Mix together one egg and 130g milk heated to 40 C in microwave Lower temperature of milk on hot days 7 Add 250g bread flour 3g salt 35g sugar 3g dry yeast a few drops of vanilla oil and roughly 170g of 5 Knead until mixture comes together Keep leftover 6 in the fridge 8 Add 40g softened unsalted butter and knead thoroughly until smooth 9 Place in a lightly oiled bowl and rest til size doubles 40 minutes at 35 C 10 Poke to let air out and divide into two pieces 230g each Form into balls cover with slightly damp tea towels and let rest for 15 more minutes 11 Stretch to nearly 20x30cm 12 Spread 90g nutella 45g each 30g chocolate chips and 5 13 Twirl around from the ends and firmly close up the ends 14 Keep edges connected and divide into two 15 Close up the edges 16 Place into 18cm pound cake mold Our house only had one 18cm mold so I placed an oven sheet inside of a 21cm mold for the second piece 17 Let expand to 1 5x size 50 minutes at 35 C 18 Brush on the leftovers of 6 19 Add 4 20 Bake for 10 minutes in an oven preheated to 180 C Then lower temperature to 170 C and bake for an additional 10 15 minutes It burns easily so cover the tops with foil midway 21 Remove from molds and cool on a rack 22 Enjoy It s a sweet bread so it can be very easy to burn Keep checking on it while it s baking If you step away from it it ll turn into something grotesque Adding the crumbles makes it harder to burn and adds lovely additional sweetness Nutella Babka Recipe NewYork ヌテラ バブカ レシピ
