こんにちはLes sens cielです 今回は旬のフランボワーズがたくさん手に入ったので フランボワーズをたっぷり使った本格的なケーキを作ってみました フランボワーズの程よい酸味と 爽やかなヨーグルトムースの２層になっているので暑い夏でもぺろっと食べれます ぜひお試しください フランボワーズのケーキGâteau à la mousse de framboises直径16cm フランボワーズピューレPurée de framboises フランボワーズ 500g framboise グラニュー糖 100g sucreフランボワーズムースMousse de framboises フランボワーズピューレ 120g purée de framboises 卵黄 3個 3 jaunes d oeufs グラニュー糖 54g sucre 粉ゼラチン 3g gélatine en poudre 冷水 15g eau froide ７割立て生クリーム35 160g crème fouettée 35 ヨーグルトムースMousse de yogourt 無糖ヨーグルト 100g yogourt nature 粉糖 30g sucre glace レモン汁 1 2 jus de citron 粉ゼラチン 3 5g gélatine en poudre 冷水 17 5g eau froide ７割立て生クリーム35 135g crème fouettée 35 グラッサージュLe glaçage フランボワーズピューレ 120g purée de framboises 水 27g eau グラニュー糖 108g sucre 水飴 36g glucose 粉ゼラチン 4g gélatine en poudre 冷水 20g eau froideビスキュイ ジョコンドBiscuit joconde 卵黄 5個 5 jaunes d oeufs 卵白 2個 2 blancs d oeufs グラニュー糖 44g sucre 薄力粉 32g farine 無塩バター 32g beurre 食用着色料 3 4g coloration
