《トリ貝の刺身》・・・・大和の 和の料理《刺身》

 

今日は 珍しく 殻付きの トリ貝が有ったので 買って来ました仕事と言う程のことは無いのですが 最後に トリ貝の身を開く時に トリ貝の黒い部分を擦り取らないようにまな板にラップを密着させるのですが なかなか 上手くできませんね五十年以前は 一斗缶一杯で五百円位で 捌きの職人さんがまな板の代わりにガラス板の上で器用に捌いていたのを思い出しました Nagasaki Yamatonara108
