こんな作り方知ってる 花満開てこね寿司 てこね寿司は伊勢志摩の伝統的な郷土料理です ご家庭でも作りやすいようにアレンジました 皆さんも自分好みに作ってみてね 本場の手こね寿司が食べられる場所は 店名 大喜住所 三重県伊勢市岩渕2丁目1 48 材料ご飯 2合大葉 5枚分いりごま 10gてこねのタレ 10ml お刺身 カツオ 6切マグロ 6切サーモン 6切タイ 6切ホタテ 9切イクラ 50g 寿司酢 酢 40ml上白糖 20g塩 8g てこねのタレ 酒 大さじ1みりん 大さじ1濃口醤油 65mlかつおぶし 2 5g トッピング 錦糸卵 適量ガリ 適量カイワレ大根 適量エディブルフラワー 適量 手順 事前準備 寿司飯用のご飯を炊いておく 大葉は細かく刻んでおく てこねのタレ の酒 みりんは煮切っておく 1 ボウルに 寿司酢 の材料をいれて混ぜる 2 濡らした寿司桶にご飯と 寿司酢 をいれ 切るように混ぜる 3 鍋にかつおぶし以外の てこねのタレ の材料をいれ 沸騰直前まで加熱した後 かつおぶしを加え 火を切る その後 漉して冷ます 4 イクラ以外の お刺身 を広めのバット並べて 3 を流し込む 5 2 に刻んだ大葉 いりごま てこねのタレ をいれて手でこねるように混ぜる 6 お刺身 を上に並べ お好みで トッピング を飾って完成
