日本料理 龍吟 ふぐ学会発表

 

東京六本木にある日本料理店 龍吟 のスタッフ資料として作成されている料理VTRのコレクション ２０１５年４月 第５回 世界料理学会 in HAKODATE 及び２０１６年５月 世界料理学会 in ARITA において chef山本がステージ上で解説しながら発表した ふぐ料理の進化と可能性 についての映像を公開する これは日本国内における この２つの学会用に日本料理龍吟 六本木本店 店舗内にて撮影 編集したものであり 学会発表用のオリジナル版に収められた全ての映像から 今回はアジア３店舗の龍吟の紹介と ふぐ食の禁止令とふぐ食の解禁を説明した ふぐ食の歴史 の２つの映像クリップを除き 料理の部分だけを抜粋して ショートバージョンとして大幅に再編集したものを紹介する これは日本料理屋として ふぐに対する総合的なアプローチで 天然ふぐに向き合ってきた２０１５年３月末までの結果を数点だけ学会発表用に収めたものである なお ふぐ においては現在も継続して研究を行っており 今後も毎年新たな ふぐ料理 を店舗にて発表していく 日本国の食文化として ふぐ専門店にて すでに確立されている ふぐ料理 であるが 龍吟では毎年 白子 が完全に成熟する１月１６日から４月１５日までの限られた期間だけ 天然ふぐに向き合い その多彩な魅力を引き出し 季節限定の特別コースとして予約を受け付け 本店にて提供している
