こんにちはLes sens cielです 今回は日本のかぼちゃが手に入ったので かぼちゃのロールケーキを作って見ました 丁寧に裏ごししたかぼちゃペーストは滑らかでコクがあり お菓子にしても料理にしてもとても美味しいです まるごと一個分のペーストを作ったので余ったものは生クリームと牛乳で伸ばし コンソメ 塩コショウを加えてかぼちゃのスープにしました それもとても美味しかったです ロールケーキにはふわふわのスポンジ生地にかぼちゃペーストとカスタードクリームを合わせた コクがありかぼちゃの濃厚な味わいが楽しめるクリームを中に巻き込みました 仕上げはモンブランの絞りにしたかったのでバタークリーム仕立てにして見ました 両方ともかぼちゃの旨味と甘味が楽しめてオススメです ハロウィンにもいかがでしょうか かぼちゃのロールケーキPumpkin roll cake型のサイズ Mold size Φ16cm Génoise size 30 30cm 180 13 15min3 eggs oeufs entiers70g sugar sucre60g cake flour farine T45 30g milk lait entier8g oil huile Crème pâtissier 300g milk lait entier80g sugar sucre1 4 vanilla beans gousse de vanille 2 eggs oeufs entiers2 egg yolks jaunes d oeufs30g cake flour farine T45 Crème de potiron200g custard cream crème pâtissière90g pumpkin puree purée de potiron45g heavy cream35 crème fraîche35 Crème au beurre140g pumpkin puree purée de potiron80g unsalted butter beurre non salé250g custard cream crème pâtissière30g powdered sugar sucre glace スポンジ サイズ30 30cm 180 13 15分卵 3個グラニュー糖 70g薄力粉 60g牛乳 30gサラダ油 8g カスタードクリーム牛乳 300gグラニュー糖 80g1 4 バニラビーンズ卵 2個卵黄 2個薄力粉 30g かぼちゃクリームカスタードクリーム 200gかぼちゃペースト 90g生クリーム35 45g かぼちゃのバタークリームかぼちゃペースト 140gカスタードクリーム 250g無塩バター 80g粉糖 30gーーーーーーーーーーーーーインスタグラムよかったらフォローよろしくお願いします youtubeには投稿しない様な日常的なことも投稿しています Music provided by EpidemicSound com Youtube Audio Library
