鮮奶哈斯麵包 兩種口味+三種整形方式 Milk Hearth Bread 哈斯麵包 HearthBread

 

材料 Ingredients 高筋麵粉 500g Bread flour 鮮奶 132g Milk 水 210g Water 砂糖 40g Sugar 酵母 5g instant yeast 奶油 40g unsalted butter 鹽巴 5g salt 可以做8個餡料 起司片 適量 cheese 1 麵團製作使用麵包機 所有材料放入 啟動 快速麵團 或是 麵包麵糰 就會自動完成揉麵 基本發酵60分鐘使用攪拌機 除了奶油之外 所有麵糰材料放入攪拌機 慢速約3分鐘 之後轉中速3分鐘 放入奶油 慢速約3分鐘 轉中速約5分鐘 檢查是否有薄膜之後 於30度環境發酵60分鐘 以上時間僅供參考 還是要依照實際狀況調整 2 將麵團分成8等份後 排氣滾圓休息10 15分鐘 3 擀成長方形 約25 10cm 左右麵團往中間折 最中間要有點交疊 捲起來 有包起司的話 右邊折起來之後 先放上半片 左邊折起來之後再放上另外半片 之後捲起來 4 水波爐約35度 或者轉40度10分鐘 用餘溫發酵完畢 發酵60分鐘5 水波爐烤箱預熱190度 麵包上噴點水 撒上麵粉 用畫刀割出5道痕跡 6 之後烘烤13分鐘即完成 麵包食譜 KitchenAid6Q KitchenAid攪拌機 起司哈斯麵包 起司麵包 水波爐 夏普水波爐 Sharp水波爐
